Hey everybody! I decided to take the weekends off of writing, but still keeping up my nutrition and exercise. So I weighed in today and I am 3+lbs lighter... YAY! No starving myself so it's a healthy loss. So over the weekend I did an hour on the elliptical, and on Sunday I took it a little easy and only did 30 minutes on the bike. Last night I cooked a supper delicious dinner with my friend Jessie. We cooked Roasted Asparagus Penne with balsamic vinegar flavoring. It was sooo good! And good for you... Anyone want the recipe? I am glad to share!!! I have been keeping myself busy and away from food to fight the cravings with my current photography project. Anyone seen it? I am putting together the real life death scenes of the Disney princess'. They are awesome, I have seriously surprised myself. And the girls I have found to model for me have done a great job! Wow, there is a lot of enthusiasm in this post...How many exclamation points have you counted so far? Ha ha anyways here is what is in store for today.
Breakfast
*half of a grapefruit
*a few sips of vanilla spiced chai tea
Lunch
*left over asparagus penne pasta
*a red plum
Snack
*one bite out of a delicious red apple (had to set up my death scene for today's shoot!)
Dinner
*Chicken topped with light marinara, sauteed portabello mushrooms and gently sauteed spinach.. I just might add a little sprinkle of some fresh Parmesan cheese.
I haven't quite got there yet, but I will finish my night with a delicious pumpkin oatmeal cookie that I baked last week... only about 65 calories! Dang they are delicious too!
For tonight's work out at the gym I am going to do an hour on the elliptical and some good core work outs with some arm targets as well.

Day Four
Still going strong, I am curious to see how long I will be able to keep this up with energy and enthusiasm. I guess we will have to see this Monday when I weigh in for a week one summary. Well today I work up still tired, didn't get much sleep again last night... Maybe my cat is hogging the bed and I just haven't figured that one out yet haha.
Breakfast
*1 slice of 12 grain toast, lightly covered with LF peanut butter and half of a sliced banana.
*1 cup of hot tea, splenda and a splash of skim milk
Snack
*Tangerine
*a super yummy pumpkin oatmeal cookie that I made from scratch... appx. 60 calories
Lunch
*one hard boiled egg
*one shrimp cake, which didn't turn out so good so really I only ate half of that
Snack
*other half of my banana from breakfast
Dinner
*I made a yummy veggie lasagna. Let me know if you want the recipe!

Day Three!!!
Oh baby, aside from a monster head ache brought on by grocery shopping, today was a pretty good day. I got some hours in at work, figured out the idea for my next painting in art class and got in a REALLY good work out! I can honestly say that I haven't ever thought, "Wow, I actually feel good right now," after a work out. It's a whole new chapter for me. I didn't get too much sleep last night because my body was a little sore, but I will get over it. Okay so here is today's consumption...
Breakfast
*half of a grapefruit

*3 tbsp malt o meal uncooked (not sure the
measurement after swelling from the water)

Lunch
*6 inch turkey sub from Subway on wheat with lettuce, banana peppers and onions... no sauce!
Snack
*a granny smith apple
Dinner
*a yummy sautéed mix of brussel sprouts, cauliflower and leftover chicken from last night's yummy panini!
I added a little fresh garlic and some salt and pepper to taste, but it was pretty good.

Day two!!!
I made it through day two everybody! Once again I am wore out, but no better way to end the day than to cuddle up with Alice, my cat, and read my book... The Help, which by the way, is very good so far but I can't compare to the movie because I am holding off. Anyways here was today's routine.
I got up an hour early today and prepared a snack and lunch to take with me to my classes. This is what I ate today:
Breakfast
*1 slice of 12 grain toast topped with half a cup of strawberry chobani yogurt and a dash of cinnamon...DELICIOUS! I gobbled it up so quickly I didn't get to take a picture of it to share.
*half of a grapefruit
Snack
* 3 oz of baby carrots (no dip)
*a medium sized pickle... had to have the pickle, I hate raw carrots I think they taste like dirt
Lunch
*4 cup spring mix salad topped with half of an apple, one hard boiled egg white, 1/3 cup kashi go lean cereal mix with almonds and 1 tbsp raspberry vinaigrette dressing.
*1/2 cup light strawberry banana jello
Snack
*the other half cup of my strawberry chobani yogurt
Dinner
*I made a yummy sandwich with 2 oz of boiled chicken, dijon mustard, 2 tbsp mozzarella cheese and a little bit of garlic salt all grilled together like a delicious panini on my oh so handy George Forman grill.
When you write it all down it seems like a lot, but when I think back to what I was letting myself eat and the portion sizes I am mortified!
When it comes to my work out today I fulfilled the following:
My daily work out x2
1 hour on the treadmill alternating run/walk
Let's hope I can keep this up. I already got some encouragement from my brother from another mother today while I was at the gym. Dear Mr. Griffith approached me and wished me his best for this journey I am on. I really appreciate it! Encouragement really helps, it is very difficult to do this alone therefore I decided to blog my work. I am also trying to keep in touch with a friend who lives about an hour away from me through e-mail. She is sharing her progress with me as I do with her. Wish us luck!

Day one cont'd...
Ok so I finished my first day... so far so good! I can tell I have a lot of muscle to build up but in all due time. I am just hoping that next thing I know it will be six months down the road, I will be walking the stage and commencement and preparing for my big move to Portland! So yesterday I got a late start and didn't get to eat much... had to buy groceries and didn't get to the store until after lunch time. Through the day I ate a banana, tangerine and a kiwi for snacks. Oh, and a cup of hot tea right before bed. For dinner I cooked a shrimp and veggie stir fry. It was delicious!!! It didn't have much to it, but the baby shrimp that I used added just enough flavor to satisfy myself and my friend who joined for dinner! Try it out and tell me what you think!
Shrimp and Veggie Stir Fry
1 cup cooked brown rice
3 oz. of shrimp (I used frozen baby shrimp meat)
1/2 cup frozen broccoli
1/2 cup frozen red or green peppers
1 tbsp. canola oil
1 tbsp. low sodium soy sauce
Directions: It's simple! All you have to do is combine all of the veggies and shrimp in a frying pan and sautee in the EVOO. After it's cooked add some soy sauce for flavor and when you think it's good place it on top of a bed of brown rice and voila!
*The modifications I made was fresh veggies rather than frozen, EVOO in place of canola oil and I added green onions.
This was a super easy dish to make, the longest step was the brown rice!
For my work out yesterday:
*1 hour of cardio-bicycle
*chest press
*shoulder press
*Daily routine: 50 crunches
25 leg lifts
50 bicycles
25 squats
15 sumos
50 calve raises
100 arm circles (alternating)
15 push ups
50 jumping jacks
1 minute plank
Needless to say I was definitely ready for bed by the time it was all said and done! Today is underway, look for tomorrows post!

Getting started: Day 1
So the other day I was fulfilling my addiction on pinterest.com when I came across a link called the Undressed Skeleton. This is about a girl my age who was unhappy with herself and her weight. So she did something about it! She changed her eating habits, started to exercise daily. I am tired of lying to myself saying things like "Oh, I am working out, one snack won't hurt," or "I swear I won't quit this time... this is my last unhealthy meal." But after looking at this girls blog and seeing that there is absolutely no difference between the two of us other than her presence of motivation and in my case, lack of!
This time I am SERIOUS. I am going to blog my day to day so that I can't quit. I keep seeing quotes like "This time next year you will wish you started today," and "Nothing tastes better than fit feels" and they are all true. I need to quit kidding myself. I have gotten out of shape and I need to start teaching myself better habits. Today I went to WinCo and started my redemption challenge.
There it is... the hardest challenge to overcome. VEGETABLES...eek! I will have to learn how to prepare ahead of time, get tasty recipes that I will actually forget are healthy for me and find the motivation to overlook the cookies and pizza!
Today also marks the fourth anniversary of the passing of my softball coach from High School. She was such a strong woman that never accepted any excuses. She told us that you never leave anyone behind and that you can only achieve excellence with practice and determination. I find today to be the perfect day to change my life. So here it goes. I will try to keep a daily update on workouts and what I consume. And I can't forget the fact that I am a photography major so I will get a little experience with food photography as well!
